Red roses and restaurant reservations aren't bad, but they are predictable. Romance, on the other hand, is not. If there's ever a time for the truly personal touch, it's Valentine's Day—your chance to pull off an impressive meal at home. Where you can set up your own backdrop, go at your own pace and where no one is hovering about your table.

Of course, you want that meal to be steak, and a great steak at that. Because like the big day, proper handling of expensive red meat is about the beauty (and danger) of relationships: between you and your butcher, the meat and the pan, the pan and the fire. If you can stand the heat, here's our advice.
