Pick a day. Now, depending on your boss, you might be able to get away with a Monday or Friday (thus scoring a 3-day weekend). If not, a Wednesday is ideal.

Finish lingering work. This allows you to skip out without stressing over looming deadlines. Wrap up any assignments that might have others looking for you.

Make the call. Don't over-embellish or give too many details. Food poisoning is simple and often effective. If the boss asks any questions, drop the D-word and trust us, that will be that.

Avoid traps and "tells." Stay off of Facebook, Twitter and G-chat (besides you do that at work). Enjoy your day off, but be sure not to come back to the office with a tan or sunburn.
