Roast the Squash
Peel skin, scoop out seeds and cut into one-inch cubes. Toss with olive oil, a handful of sliced red onion, fresh rosemary. Place on baking sheet and season with salt and pepper. Roast at 425 degrees for 30 to 40 minutes, until the flesh is tender and the onions are translucent.


Make the Pizza
1) Roll out pizza dough and transfer it to a baking sheet.
2) Brush with maple syrup.
3) Scatter the roasted squash over the dough.
4) Lightly cover with mozzarella.
5) Season with salt and pepper.
6) Additions: Sprinkle some goat cheese or some more fresh rosemary and red onion on top.
7) Bake at 425 degrees for 25 minutes, until the cheese has melted and the crust is golden and crisp.
