Utah is probably the last place you'd expect to find a decent whiskey. In fact, there hasn't been a working distillery there since Prohibition in the 1870s. That is, until now. David Perkins, a former biochemist who learned the whiskey biz in Kentucky, began producing the age-old American libation two years ago thanks to a long-forgotten law that actually permits distilleries in Utah. This fall, he moved the operation into a century-old former livery stable in the historic area of Park City, where he bottles the spicy and rich whiskey. At the base of the town lift, it makes High West the only ski in/ski out distillery in the world. As for the stuff itself, Perkins says his signature whiskey is the Rendezvous Rye, created from a a six and a 16-year-old blend, which has notes of cinnamon, caramel and mint.
